Ethiopia is one infamous origin of coffee with its magnificent stone fruit notes! This particular coffee comes from the Edera village, located in Yirgacheffe, southern part of the country in the Gedyo zone. Approximately 410 farmers are involved with farming and harvesting the cherries that arrive at the Worka Sakuro processing station. The ripe cherries are placed onto raised beds to dry under the natural sunlight for 4 to 6 weeks. During this process, the cherries are turned every
couple of hours to prevent mould developing and over-fermenting.
You can expect a confectionary- like sweetness of rocky road, gentle yet pungent starfruit and juicy yellow apricot.
