Located in the Western side of the capital in Oromina region, coffees from this Guji region have always stood out with a sweeter profile compared to other regions of Ethiopia. Typical of a lot of Ethiopian coffee production, this Dikitu has also been carefully cultivated and picked by approximately 350 small farm holders. Once harvest and sorting is done, the cherries are dried on raised beds for 4 - 6 weeks. In this period, the cherries are turned over carefully every couple of hours to ensure even drying and also to prevent mould from developing.
Without a doubt, this lot carries the infamous Ethiopian stone fruit qualities - remindful of sticky and sugary jam made from fully ripe yellow apricots. This is followed by crisp and tart strawberry acidity and a lingering aroma of hibiscus tea.
