
Colombia Strawberry Felipe Arcila
Our first ever fruit maceration coffee! Fresh strawberry aroma will carry on till the last sip, accompanied by smooth vanilla infused white chocolate. We chose this particular lot for its harmonious balance of fruit and coffee.
This coffee was grown with love and passion by Felipe Arcila at his farm, Jardines Del Eden. Pijao is situated in the south-east in Quindio, Colombia. Subtropical climate and high altitude of 1900-2200 MASL ensure an optimal environment for this castillo variety to strive. Picked cherries are exposed to a dry anaerobic fermentation for 72 hours with pulp on. During this stage strawberry and wine yeast are added. After this, cherries are pulped and dried on raised beds with ripe strawberries amongst them.
