This is by far the most fun geisha we have ever had on our menu! Sparkling acidity of orange sherbet (the confectionary kind), tropical lusciousness and sweet creamy soda float you may have had as a child - if you haven't, you're missing out :p

- • harvested only above 22 brix level
- • thermal shock treatment (50° for 30 mins) to disinfect and remove impurities
- • left to oxidise for 48 hours with recirculation of mosto
- • double bagged to ferment for 36 hours
- • solar dried for 2 days
- • 36 hours in a mechanical drier to achieve uniformity and moisture level of 11.5%
