Honduras Don Fabio Mogola Anaerobic Natural

Crisp and tart red apple acidity - apple is caramelised with cinnamon! Imagine gentle panela sweetness, creamy custard on fully ripen paw paws, followed by a light anaerobic funk. The process really accentuates the tart apple acidity! Don Fabio has had multiple wins at Cup of Excellence. His botanical-garden-like farm, Mogola, has had a win in 2004. Cold yet humid weather conditions around him allow his plants to mature very slowly, matched with his own method of processing the harvest. This lot was dried at his home. This way, he is able to control his fermentations better, away from external weather influences. The harvested cherries are put through a de-pulping machine and a floatation tank to remove any unripe and hollow cherries. They are then kept in air-tight barrels for 72 hours, after which they are dried on raised beds for an optimal airflow during a mechanical slow drying that lasts between 20-25 days.
