El Salvador Diego Baraona

This coffee comes from a renown farm, Finca Los Pirineos - a multiple auction winner with Coffee of Excellence. Vibrant, purified, juicy cup consisting of cold-pressed apple juice and tropical juice mix of mango and rockmelon with such creamy texture even as filter! This farm rose to its fame with the inspiring innovation from the late Gilberto (Diego's father), who showed no fear in trialing new processing methods and varieties. With a seed bank consisting of approximately 80 varieties, this is the only World Coffee Research certified farm in El Salvador. This pacamara variety underwent a carbonic maceration honey process.   The harvested cherries are fermented in whole cherries first, after which the fruit is pulped off. The parchment coffee underneath the fruit is then kept in aluminium barrels with no oxygen. This is done by pumping carbon dioxide into the barrels. After the anaerobic state, the coffee is taken out, milled and left to dry on raised beds.
