The Wolichu Sodu processing station is located 2.5km from the town of Hara Adama, Guji district of Ethiopia. During the harvest season, this processing station receives cherries daily by local farmers. The delivered cherries are depulped on the same day of arrival. The cherries are then fermented in open-air water tanks for 8-12 hours, after which they are put through water channels to be scrubbed off of their mucilage. They are then spread over raised beds to dry for 5-15 days until ideal moisture level is achieved.
