Ethiopia Kochere

Another gift from the renown Yirgacheffe region of Ethiopia is this washed process Kochere. Bright, fruity and drinks smoothly like a well-brewed black tea (with a nice boost of caffeine of course :) Think of juicy tart red and pink berries, clean yet sweet nashi pear with a hint of mouth-watering lychee extracts.  
As is with most Ethiopian coffees, this is an Ethiopian Heirloom variety. Maintained by small farm holders who deliver their cherries to the Kochere washing station to be processed. This washed lot is harvested and pulped on the same day, kept in open-air tanks for 8-12 hours. After this they are pushed and scrubbed off of the mucilage in water channels, dried on raised African beds for 5-15 days.
