Ethiopia Banko Gotiti

This coffee carries such elegance! Fragrances of white flowers like frangipani and jasmine, accentuated acidic notes of  mandarin and pomegranate, together with the profoundly stereotypical stone fruit qualities of Ethiopian coffees. When you grind this coffee, your sense of smell will be pleased as you'll be transported to a field of fruits and blossoming flowers in spring time. Banko Gotiti is a village in the Gedeb district of Yirgacheffe, Ethiopia. With about 300 small holders who look after their own plantation, the cherries are depulped on the same day as the harvest. These seeds are fermented in open-air tanks for about 8-12 hours. They are then put through water channels to remove any mucilage, dried on raised beds for about 5-15 days depending on the weather conditions.
