If you are into stone fruits, citrus flavours with floral aromas, this is the one for you! The infamous Yirgacheffe region of Ethiopia is always a favourite of ours. As usual, small plots of coffee farms usually called 'garden coffee' are managed by individual farmers, which are gathered at a washing station, this time around at Aricha. 8-12 hours of fermentation is done in open-air tanks, after which they are scrubbed off of their mucilage. 5-15 days of drying on raised beds until ideal moisture level is reached.
