Sweet and mouth-watering apple pie served with fully ripe rockmelon! This Pacamara variety has a great balance of crisp tart acidity and long-lingering sweetness.
Johny Lemus is the man behind this beautiful creation at his farm, San Antonio, in the most northern region of El Salvador. Unlike the relatively small size of his farm at 2.15 hectors, his coffee speaks big in volume with its quality and consistency.
These big pacamara cherries are harvested and depulped on the same day. They are then laid on raised beds to dry for 20-25 days.
